Easy Aztec Guacamole Dip

Easy Aztec guacamole dip
Easy to make and healthy dip for tacos, fajitas an many appetizers
Love avocados?
In the language of the Aztecs, the combined words for avocado and mixture translate into guacamole.
Avocados are one of my favorite fruits and I enjoy a tasty and healthy self-made dip. It’s quick and easy to make and yes, there is a difference to the ready-to-use guacamoles from your grocery store.
Another reason for me to make it on my own: I really hate cilantro! So it’s easy for me to substitute cilantro by Italian parsley.
Why not try it out and adapt the recipe to your taste?

Guacamole Dip
Guacamole - smooth or chunky, depending on your taste.
Ingredients
- 1 large avocado, peeled, pitted and mashed
- 2 tablespoons (20 milliliters) lime juice
- 2 tablespoons (20 grams) onions, cut very fine
- 4 cherry tomatoes, diced
- 2 tablespoons (5 grams) cilantro, chopped *
- 1 tablespoon (30 grams) sour cream **
- Salt and pepper for taste
Instructions
- Cut the avocado in half, remove the pits and scoop out the flesh.
- In a medium bowl mash *** the flesh with a fork and add the lime juice. (See picture)
- Chop the onions finely.
- Cut the tomatoes into small cubes.
- Chop the coriander
- Now stir the onions, tomatoes and coriander thoroughly into the avocado mixture.
- If you like you can now fold in the sour cream.
- Season to taste with salt and pepper.
- The guacamole should be served immediately. ****
Notes
* Because I hate cilantro, I always use Italian parsley - for me it's more delicous 😉
** This is absolutely optional. I love it because it makes the guacamole creamier.
*** If you like it smooth, mash it more. You like it chunky, mash it coarsley.
**** The longer the guacamole stands, the faster it loses color and turns grey. The brown discoloration is the result of the reaction of the fruit flesh with oxygen from the air, i.e. oxidation.

How do you keep guacamole longer fresh and green?
Just put the Avocado pit in the guacamole while storing in the fridge!
The enzymes of the pit slow down the oxidation of the fruit, like lime juice or onion peel.
The same applies to guacamole: If you leave the pit in the guacamole, it stays longer green and fresh.
