Actually I never really liked cookies, somehow they were too dry and too sticky sweet.
Well, until a friend of mine took me to an Indian restaurant in Houston and they had these incredible cookies.
So good that now whenever I am in the Houston area I have to take one of these cookies with me.
But what to do when Corona strikes and you have to stay at home? Go online and search for cookie recipes.
After several hours of research, I came across a Chocolate Chip Cookie recipe, which I adapted and refined a bit. The fresh mint I also added makes the cookies so absolutely delicious. Try them out and be surprised!
I had to move to the US to become a cookie lover!


Chocolate Chip Mint Cookies
Incredible delicious cookies with chocolate chips and a fresh mint flavor
Ingredients
- 1 cup (230 grams) cold unsalted butter cut into small cubes
- 1 cup (160 grams) brown sugar
- 1/2 cup (100 grams) sugar
- 2 eggs
- 1 1/2 cups (180 grams) cake flour*, **
- 1 1/2 cups (180 grams) all-purpose flour**
- 1 teaspoon (3 grams) cornstarch
- 3/4 teaspoon (3 grams) baking soda
- 3/4 teaspoon (4 grams) salt
- 2 cups (330 grams) dark chocolate chips***
- 2 cups (220 grams) walnuts roughly chopped
- 1/4 cup (8 grams) chopped fresh mint leaves
Instructions
- Preheat oven to 410 F (210 °C) and line two baking sheets with parchment paper.
- In a large mixing bowl of a stand mixer (or using a large bowl and a hand mixer), cream together cold cubed butter, brown sugar and sugar until creamy or for about 3-4 minutes. (See picture)
- Scrape down sides and bottom of the bowl and add eggs, one at a time, mixing well after each one.
- Stir in flours, cornstarch, baking soda, and salt. Mix on the lowest speed until just combined to avoid overmixing.
- Stir in chocolate chips, walnuts and mint leaves also on the lowest speed or handed until they are evenly incorporated into the dough. The dough should be quite sticky. (See picture)
- Separate the dough into 10 equal pieces (I use my ice cream scoop for this). I prefer to weigh out all dough balls (approx. 5 ounces, approx. 140 grams). (See picture)
- Place the dough balls on the prepared baking sheet and press them a little flat, the dough should be about 3/4 - 1 inch (2 - 2.5 cm) high. The diameter of the dough should be about 4 inches (about 10 cm). You will fit 4 to 6 cookies on one large cookie sheet. Please let space between the cookies, they will grow in the oven to about 4 3/4 inches (12 cm). (See picture)
- Bake for 9-12 minutes or until golden brown on the top. Let them rest for at least 15 minutes to set.
Notes
* You can substitute all-purpose flour for cake flour
** Cake flour is 405 flour, all-purpose flour is 550 flour in Germany
*** If you can't find Dark Chocolate Chips you can also use roughly chopped dark chocolate
